Dill: A Taste of Iceland

Dill is a fine dining restaurant in Reykjavik, Iceland, that has been awarded a Michelin star. The restaurant is known for its focus on using local ingredients and its creative interpretation of Icelandic cuisine.


The restaurant was founded in 2012 by chef Gunnar Karl Gislason. Gislason is a native Icelander who trained in some of the best kitchens in Europe. He brings his passion for Icelandic cuisine and his international experience to Dill, creating dishes that are both innovative and delicious.


The menu at Dill changes seasonally, but always features a variety of dishes made with fresh, local ingredients. Some of the signature dishes include seared scallops with seaweed butter, lamb tartare with pickled beets, and Arctic char with wild mushrooms.


The dishes at Dill are beautifully presented, and the flavors are truly unique. Especially the desserts were truly delightful and surprising. The restaurant has a warm and inviting atmosphere, and the service is attentive and knowledgeable.



However, I would say that the service was a bit stiff. At best, in a fine dining restaurant the professional yet relaxed service makes you feel like you would be dining at your best friend's place who just happens to be a tremendous chef. At Dill, the waiter seemed a little bit rushed and didn't seem to have a lot of personality. Additionally, the vegetarian menu was not as tasty as the regular menu. The dishes were a bit bland and uninspired. At the end of the dinner the bill was also handed to the male without asking, which to me gives a scent of the 1980's.



Overall, I would recommend Dill to anyone looking for a fine dining experience in Reykjavik. The food is excellent, and the atmosphere is welcoming and nice. However, if you are vegetarian, you might not get the full experience.

  • Make a reservation well in advance, as the restaurant is very popular.
  • Dress in smart casual attire.
  • Be prepared to spend a bit of money. Dinner for two with wine will set you back around ISK 30,000.
  • Enjoy the experience! Dill is a truly special restaurant, and you won't be disappointed.
